| A version for us mere humans, and a version for The Birds:
Human: 4 eggs 3 cups grated carrots 1 1/4 cups vegetable oil 1 cup chopped pecans (optional) 2 cups sugar 2 teaspoons vanilla extract 2 cups flour (white or wheat, you pick. I like 1 cup white, 1 cup wheat) 2 teaspoons baking soda 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons ground cinnamon
- Preheat oven to 350 degrees; Grease & flour 9x13 pan - In large bowl beat together eggs, oil, sugar, vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon. Stir in carrots. Fold in pecans. Pour into pan. - Bake 40-50 minutes or until toothpick comes out clean. - Cool completely before frosting.
Frosting: 1/2 cup softened butter 8 ounces softened cream cheese 4 cups confectioners sugar/powdered sugar (my family doesn't like it too sweet. I use 2 cups powdered sugar) 1 teaspoon vanilla extract 1 cup chopped pecans (optional)
- Beat everything, except the pecans, together until creamy. Stir in pecans.

- Preheat oven to 350 degrees; Grease & flour 9x13 pan - In large bowl beat together eggs and egg shells, oil, vanilla. Mix in flour, pellet powder, baking soda, baking powder, salt, cinnamon. Stir in carrots. Fold in pecans. Pour into pan. - Bake 40-50 minutes or until toothpick comes out clean.
Halve the recipe if you don't have a lot of birds. This carrot cake stays well in the freezer, so you can cut portions (or make in cupcake pan), put into ziplock baggies and freeze. Thaw for a few seconds in the microwave before serving.

| No no! You make carrot cake for your birds, "forget" to add egg shells and pellets, and make enough that there will surely be too much for them to eat all by themselves. And make sure there's no room in the freezer, so you'll have no choice but to help your birdies out | |
